Pear Tart


Today, I’ll introduce “Pear Tart”. Tart is a sweet with fruit, custard cream and jam on the pie dough. Unlike sponge cake, it is characteristic that the dough is crisp. In the Japanese cake shop, it is made by changing the fruit according to the season.  This time, I made it with pears. By painting jelly on the finish, the fruit looks glossy and beautiful. Because it is necessary to cool the tart dough for a long time, we will make this sweet for two days.


First, I made the tart dough. The ingredients of tart dough are flour, sugar, salt, egg yolk, almond powder and unsalted butter. First, mix flour, almond powder, sugar and salt in a food processor. Then, add unsalted butter and mix. When it becomes smooth, add egg yolk and mix it. Second, put dough on a wrap and wrap it like a fold over. Next, roll out the dough flat and square. Then, put it the refrigerator and cool it for more than half a day. Thirdly, cut the dough in small pieces and round like a ball. Then, roll out the dough to 2mm~3mm thick with a rolling pin and put it in a mold. Next, cut off the dough that sticks out of the mold and make holes with a fork at the bottom of the dough. Finally, bake it in an oven warmed to 170℃ for about 20 minutes. This completes the tart dough.


Next, I show how to make the almond cream and decoration. The ingredients of almond cream are butter,sugar, egg, almond powder, rum and vanilla essence. First, put the butter in a bowl and loosen it with a whipper. Then, add sugar and mix until creamy. Second, add beaten egg to the bowl little by little, add almond powder and mix. Also, add rum and vanilla essence and mix. Finally, pour it into baked tart and arrange thinly pears. Then, bake it for about 13 minutes in an oven at 220℃.
While baking the tart, make a jelly over it. First, put sugar and water in a pan. Then, boil it and cool down quickly. Second, add soaked gelatin in it and dissolve the gelatin. Also, add kirsch and lemon juice and mix the bowl that soak in cold water. Finally, paint it on the baked tart with a brush.
