Financier
Today, I’ll introduce Financier. Financier is also called Friand. Financier and Madeleine are very similar, so they are often mistaken. But there are several ways to distinguish them. The first is shape. Financier is generally rectangular, but Madeleine is a shell shape and a round shape. Financier means rich in French. It is said that the shape of a Financier is imagined as a gold bullion rod. The second is flour. The ingredients of Financier are almost the same as Madeleine. However, while Madeleine uses flour, Financier uses a mixture of flour and almond powder. Also, Financier uses only egg white and burnt butter. I thought that financier was more trouble than Madeleine and preparation was hard.
The ingredients are egg white, sugar, honey, almond powder, flour and butter. Prepare for the preparation before you start making the financier. In the beginning, brush a lot of butter in the financier’s mold. This work makes it easy to remove the baked dough from the mold. Next, mix flour and almond powder and sift it. Finally, put the butter in a small pan and heat it until the whole butter gets colored. When butter gets colored, make it light brown while baking it with residual heat. This is the end of the preparation.
When the preparation is finished, put egg whites, sugar and honey in the bowl and mix with a whisk. Next, when it turns a little pink, add the mixture of flour and almond powder and mix it. At this time, adding leaves of tea and chocolate together, you can make a different taste financier. Then, add the burnt butter little by little and mix. Next, pour into the mold, pull out air and bake at 170℃ for 12 minutes in the oven. Finally, when it is baked, put it on the net and immediately remove it from the mold and cool it.
